Tropical Iceblocks 3-ways

Ice block. Icy Pole. Popsicle. Ice cream.

Whatever you call them, we all know the joy of an icy treat on a hot day. They feel almost nostalgic, reminding us perhaps of hot summer days spent at the beach when you were given the change to buy an ice cream on the way home...

They're pretty damn easy to make and there's something so epic about knowing you have these as a go-to on a hot summer's day.

These recipes are super simple and foolproof.

I've also got a recipe for Mango 'Froyo' over here if that tickles your fancy.

By all means get creative with your favourite flavours and make larger batches to store in your freezer for whenever the mood strikes. Just grab yourself some ice block moulds (kitchen stores, eBay), paddle-pop sticks (unless there are handles in the moulds) and let's get started! Iceblocks are also a great way to utilise fruit that you might otherwise throw out - blend your damaged fruit and freeze!

Watermelon & Mint Refresher

Ingredients
  • ¼ small watermelon
  • 20 small mint leaves
Instructions
  1. Cut melon flesh away from the skin and place into a blender
  2. Roughly tear herbs and add to the blender
  3. Blend until smooth
  4. Pour into ice block moulds
  5. Set in the freezer for at least 4 hours
Notes
Remove by running moulds under hot water if necessary.

Berry & Vanilla Yoghurt

Ingredients
  • 2 cups Greek yoghurt
  • 2 cups mixed frozen berries
  • Splash milk
  • 1 teaspoon vanilla extract
Instructions
  1. Add all ingredients to a blender
  2. Blend until smooth
  3. Pour into ice block moulds
  4. Set in the freezer for at least 4 hours
Notes
