It’s summer here in Australia and other than the past few days (of drizzly stay-inside-rain), it’s been absolutely sublime weather, everyday. I can’t help but wake up early with the sun, feeling energised and excited about the day that lays ahead.
It’s without a doubt my favourite time of year.
Big respect to my (far) Northern-hemisphere readers for braving and thriving in your harsh, though beautiful winters.
Summer, Spring, Autumn or Winter, lucky for us Aussies my favourite avocados are available year-round with avo production widespread across the country, in environmentally diverse regions, and producing close to 55,000 tonnes per year.
I feel that we would eat 1 tonne in our house alone. Seriously.
As a kid, I must admit I wasn’t much of an avocado lover and it took me a long time to get around to trying guacamole. Though can you blame me? Mostly murky-coloured and often strange-tasting, this was not the kind of food I liked to eat, still don’t.
However as a wholefoods cook I have a personal philosophy that I’ve come to regard above all others…
A few simple ingredients often makes the best dishes.
This is precisely how I feel about this guacamole, a go-to recipe in our house, ready in minutes and oh-so-versatile.
On toast. With crunchy vegetables. As a dip. On top off eggs. The list goes on and is delicious…
It’s not all about guacamole & chips over this way (however with the perfect chip that’s a great idea too!) In fact my Monday night dinner which went crazy on social media last week, featured this very guacamole, Mediterranean chickpeas, tomatoes and some deliciously bitey fetta – perfection.
This creamy fruit (yep you heard that right!) has a whole host of goodness going on inside it. With more potassium; assisting healthy blood pressure; per weight than bananas and jam-packed with healthy saturated fats; assisting our awesome brains; this fruit reduces levels of bad cholesterol in your blood, lowers your risk or stroke and heart disease; it’s what I would call a superfood.
Let’s get to that recipe then!
- 2 avocados
- ¼ cup fresh coriander, finely chopped
- Juice of ½ fresh lemon
- Juice of ½ fresh lime
- Salt & pepper, to taste
- Scoop out avocados and take a fork to smash into a paste
- Add coriander, lemon, lime juice and season to taste
- Mix well and serve with your chosen dish
It really doesn’t get any easier or more delicious.
