Ingredients
Salad
  • ½ broccoli head
  • 2 red radishes
  • 1 tablespoon fresh parsley
  • 2 teaspoons slivered almonds
  • Salt and pepper, to taste
Dressing
  • ¼ cup fresh parsley leaves
  • ¼ cup Greek yoghurt
  • 1 teaspoon olive oil
  • 1 teaspoon fresh lime juice
  • Salt to taste
Instructions
  1. Wash and chop broccoli into smaller florets
  2. Thinly slice radish and chop parsley
  3. Add to a salad bowl with almonds and season to taste
  4. Very finely chop parsley for the dressing
  5. Combine all dressing ingredients and mix well through salad to serve
Notes
Yes raw broccoli can be incredible!
