Cabbage, Radish & Pecorino salad

Ingredients
  • 1 cup white cabbage
  • 1 medium red radish
  • 1 tablespoon fresh chives
  • ½ tablespoon pecorino cheese
  • 5 pods/1/2 tablespoon broad beans
    (or sugar snap peas)
  • 1 teaspoon olive oil
  • Salt and pepper, to taste
Instructions
  1. Wash and finely shred cabbage
  2. Wash, top, tail and thinly slice radish
  3. TIP - a mandolin works a treat to prepare the cabbage and radish
  4. Wash, dry and finely chop chives
  5. Freshly grate cheese
  6. Combine all ingredients in a mixing bowl, coat well with oil and season to serve
