Cauliflower Mash

Ingredients
- 1 cauliflower head
- 2 tablespoons fresh chives
- 1 tablespoon olive oil
- Salt and pepper
Instructions
- Trim cauliflower head to florets
- Bring saucepan of water to the boil
- Once boiled, add cauliflower
- Cook for 10 minutes or until tender
- Reserve 2 tablespoons cooking water
- Drain cauliflower and allow to cool slightly
- Add cauliflower, oil and salt a food processor
- Process, adding 1 tablespoon of the water at a time
- Don't over-process as the mash will liquify
- Serve with your preferred protein and enjoy
Notes
NOTE - you can use a masher if you don't have a food processor.
Potatoes are fantastic though this mash option is perfect for when you need some more vegetables in your life and it's delicious too.
