  • 1 cauliflower head
  • 2 tablespoons fresh chives
  • 1 tablespoon olive oil
  • Salt and pepper
  1. Trim cauliflower head to florets
  2. Bring saucepan of water to the boil
  3. Once boiled, add cauliflower
  4. Cook for 10 minutes or until tender
  5. Reserve 2 tablespoons cooking water
  6. Drain cauliflower and allow to cool slightly
  7. Add cauliflower, oil and salt a food processor
  8. Process, adding 1 tablespoon of the water at a time
  9. Don't over-process as the mash will liquify
  10. Serve with your preferred protein and enjoy
NOTE - you can use a masher if you don't have a food processor.

Potatoes are fantastic though this mash option is perfect for when you need some more vegetables in your life and it's delicious too.

Perfect served alongside a classic rack of lamb.
