Ingredients
  • 1 packet quality spaghetti
  • 2 avocados
  • Juice ½ lemon
  • 1 garlic clove
  • ¼ cup fresh parsley
  • ¼ cup fresh basil
  • Salt and pepper, to taste
  • ½ punnet cherry tomatoes, quartered, to serve
  • Parmesan or pecorino cheese, to serve
Instructions
  1. Cook the spaghetti according to the packet instructions
  2. Whilst pasta is cooking, place avocado, lemon juice, garlic, herbs, salt and pepper in a food processor
  3. Combine well to a smooth sauce
  4. Once cooked, coat the spaghetti well with the sauce
  5. Add the tomatoes and cheese to serve
Notes
Lightning fast, stores well and really satisfies for lunch or dinner.
You could even make ahead of time and/or enjoy leftovers.

Use udon or soba noodles for a twist on the classic pasta.
Gluten-free? Find buckwheat or rice noodles instead.

Coriander/mint/basil combination would work really well too for a twist on the herbs.
Add grilled or BBQ chicken for protein.
