Creamy Avocado Pasta

Ingredients
- 1 packet quality spaghetti
- 2 avocados
- Juice ½ lemon
- 1 garlic clove
- ¼ cup fresh parsley
- ¼ cup fresh basil
- Salt and pepper, to taste
- ½ punnet cherry tomatoes, quartered, to serve
- Parmesan or pecorino cheese, to serve
Instructions
- Cook the spaghetti according to the packet instructions
- Whilst pasta is cooking, place avocado, lemon juice, garlic, herbs, salt and pepper in a food processor
- Combine well to a smooth sauce
- Once cooked, coat the spaghetti well with the sauce
- Add the tomatoes and cheese to serve
Notes
Lightning fast, stores well and really satisfies for lunch or dinner.
You could even make ahead of time and/or enjoy leftovers.
Use udon or soba noodles for a twist on the classic pasta.
Gluten-free? Find buckwheat or rice noodles instead.
Coriander/mint/basil combination would work really well too for a twist on the herbs.
Add grilled or BBQ chicken for protein.
