Green Bean & Fried Egg Udon Noodles

Ingredients
Noodles
- 1 packet quality udon noodles
- 2 handfuls green beans
- 2 tablespoons olive oil, to cook
- 2 tablespoons tamari
- 1 tablespoon sesame oil
Eggs
- 4 eggs
- 1 tablespoon olive oil, to cook
To serve
- ½ bunch shallots
- Chilli flakes, sesame seeds and
pepper, to taste
Instructions
Noodles
- Cook noodles according to packet instructions
- Once cooked to your preference, drain, rinse and set aside in a large bowl
- Whilst they cook wash, top and tail beans
- Heat oil in a wok on high heat
- Once hot, add beans and cook rapidly for a minute or so
- Add tamari and sesame oil
- Cook for a few minutes until aromatic
- Pour contents into the noodle bowl and mix through
Eggs
- Either in the same wok or a large frypan, add oil to cook eggs over med-high heat
- Once hot, crack in all 4 eggs at once
- Cook for a minute and remove from heat
To serve
- Wash and chop shallots
- Divide noodles between bowls, top with an egg and season with shallots, chilli flakes, sesame seeds and pepper to serve

Gluten-free? Use buckwheat soba or rice noodles.
