Green Bean & Fried Egg Udon Noodles

Ingredients
Noodles
  • 1 packet quality udon noodles
  • 2 handfuls green beans
  • 2 tablespoons olive oil, to cook
  • 2 tablespoons tamari
  • 1 tablespoon sesame oil
Eggs
  • 4 eggs
  • 1 tablespoon olive oil, to cook
To serve
  • ½ bunch shallots
  • Chilli flakes, sesame seeds and
    pepper, to taste
Instructions
Noodles
  1. Cook noodles according to packet instructions
  2. Once cooked to your preference, drain, rinse and set aside in a large bowl
  3. Whilst they cook wash, top and tail beans
  4. Heat oil in a wok on high heat
  5. Once hot, add beans and cook rapidly for a minute or so
  6. Add tamari and sesame oil
  7. Cook for a few minutes until aromatic
  8. Pour contents into the noodle bowl and mix through
Eggs
  1. Either in the same wok or a large frypan, add oil to cook eggs over med-high heat
  2. Once hot, crack in all 4 eggs at once
  3. Cook for a minute and remove from heat
To serve
  1. Wash and chop shallots
  2. Divide noodles between bowls, top with an egg and season with shallots, chilli flakes, sesame seeds and pepper to serve
Notes
A fast and simple bowl of tasty goodness!

Gluten-free? Use buckwheat soba or rice noodles.

Tamari is a gluten-free, less refined version of soy sauce and is readily available in stores.
