Green Olive Baked Chicken & Chips

  • 4 large Desiree potatoes
  • 1 tablespoon olive oil
  • Salt & pepper
  • 2 medium chicken breasts
  • ½ bunch fresh parsley, leaves picked
  • ½ cup green olives, pitted
  • 1 teaspoon olive oil
  • 2 tomatoes
  • Handful basil leaves
  • 2 teaspoons balsamic vinegar
  • Salt & pepper to taste
  • 1 lemon, cut into wedges, to serve
  1. Preheat oven to 200 degrees Celsius (electric)
  2. Wash potatoes well and cut lengthways in half and again
  3. Slice into long chips
  4. Place in baking tray, coating well with oil and season to taste
  5. Bake for 30-40 minutes until golden and crispy
  6. After 10-15 minutes, shake the tray and return chips to oven
  7. Whilst baking, line another baking tray with baking paper
  8. Prepare chicken breasts by opening breast and slicing lengthways through the centre, place on tray
  9. For faster cooking time, cut these pieces in half again width-ways
  10. Combine parsley, olives, oil and black pepper in a small food processor
  11. Whizz for 30 seconds until finely chopped and paste-like
  12. You may need to pause and scrape the sides down
  13. Evenly spread mixture over chicken pieces
  14. Place in the oven to bake for 20 minutes
  15. Whilst baking, wash and slice tomatoes
  16. Divide tomato slices and basil leaves between plates to serve, season to taste
  17. Once chicken and chips are both cooked through, place with salad on the plate and serve with a fresh lemon wedge

A few minutes prep and let the oven do the rest for a delicious and nutritious dinner.

If you're cooking for 1-2 people, make less chips (as they're best served fresh), though cook enough chicken to enjoy leftovers and/or add to other dishes.
