Green Olive Baked Chicken & Chips

Ingredients
Chips
- 4 large Desiree potatoes
- 1 tablespoon olive oil
- Salt & pepper
Chicken
- 2 medium chicken breasts
- ½ bunch fresh parsley, leaves picked
- ½ cup green olives, pitted
- 1 teaspoon olive oil
- 2 tomatoes
- Handful basil leaves
- 2 teaspoons balsamic vinegar
- Salt & pepper to taste
- 1 lemon, cut into wedges, to serve
Instructions
- Preheat oven to 200 degrees Celsius (electric)
- Wash potatoes well and cut lengthways in half and again
- Slice into long chips
- Place in baking tray, coating well with oil and season to taste
- Bake for 30-40 minutes until golden and crispy
- After 10-15 minutes, shake the tray and return chips to oven
- Whilst baking, line another baking tray with baking paper
- Prepare chicken breasts by opening breast and slicing lengthways through the centre, place on tray
- For faster cooking time, cut these pieces in half again width-ways
- Combine parsley, olives, oil and black pepper in a small food processor
- Whizz for 30 seconds until finely chopped and paste-like
- You may need to pause and scrape the sides down
- Evenly spread mixture over chicken pieces
- Place in the oven to bake for 20 minutes
- Whilst baking, wash and slice tomatoes
- Divide tomato slices and basil leaves between plates to serve, season to taste
- Once chicken and chips are both cooked through, place with salad on the plate and serve with a fresh lemon wedge
