Ingredients
Chicken
- 1 medium chicken breast
- Salt and pepper, to taste
- 1 tablespoon olive oil, to cook
Wraps
- 1 avocado
- 2 tablespoons pesto
- 4 preservative-free wrap breads
- 2 small roma tomatoes
- 4 slices cheddar cheese
- Thin slices red onion
- 2 cups rocket leaves
- Salt and pepper, to taste
Instructions
- Season the chicken and heat a griddle or frypan on medium-high heat
- Add oil
- Once hot, cook the chicken thoroughly, set aside
- Combine avocado & pesto, spread on wrap bread
- Wash and slice tomatoes
- Layer chicken, then cheese, onion & rocket
- Top with tomatoes, season, wrap and serve immediately
Notes
Grill chicken the night before or use shredded BBQ chicken if you're short on time.
