Grilled Chicken Salad Wraps

  • 1 medium chicken breast
  • Salt and pepper, to taste
  • 1 tablespoon olive oil, to cook
  • 1 avocado
  • 2 tablespoons pesto
  • 4 preservative-free wrap breads
  • 2 small roma tomatoes
  • 4 slices cheddar cheese
  • Thin slices red onion
  • 2 cups rocket leaves
  • Salt and pepper, to taste
  1. Season the chicken and heat a griddle or frypan on medium-high heat
  2. Add oil
  3. Once hot, cook the chicken thoroughly, set aside
  4. Combine avocado & pesto, spread on wrap bread
  5. Wash and slice tomatoes
  6. Layer chicken, then cheese, onion & rocket
  7. Top with tomatoes, season, wrap and serve immediately
Grill chicken the night before or use shredded BBQ chicken if you're short on time.

TOP TIP - Make the wraps at work so there’s no soggy tomatoes!
And have extra chicken to add to other meals too.
