Ingredients
Marinade
- 1 heaped cup fresh coriander (stalks
and leaves) - ¾ cup fresh parsley (stalks and leaves)
- 1 small garlic clove, crushed
- 1 ½ tablespoons fresh ginger
- 2 tablespoons olive oil
- ½ tablespoon tamari
- ¼ - ½ long red chilli, deseeded
(optional)
Chicken
- 400g chicken breast
- Salt and pepper
- ½ teaspoon fresh lime zest, finely grated
- Juice of ½ fresh lime
Instructions
- Combine all marinade ingredients in a food processor and blitz until well combined
- Coat chicken breasts with marinade in a large bowl
- Cover and store in the fridge for 30 minutes
- Preheat oven to 180 degrees Celsius (electric)
- Line a baking tray with baking paper
- Once chicken is marinated, place on tray
- Bake for 20 minutes
- Once cooked, remove from heat
- Season and coat with lime juice, zest and pan juices
- Serve with your favourite veggies, salad and/or brown rice
