Ingredients
Marinade
  • 1 heaped cup fresh coriander (stalks
    and leaves)
  • ¾ cup fresh parsley (stalks and leaves)
  • 1 small garlic clove, crushed
  • 1 ½ tablespoons fresh ginger
  • 2 tablespoons olive oil
  • ½ tablespoon tamari
  • ¼ - ½ long red chilli, deseeded
    (optional)
Chicken
  • 400g chicken breast
  • Salt and pepper
  • ½ teaspoon fresh lime zest, finely grated
  • Juice of ½ fresh lime
Instructions
  1. Combine all marinade ingredients in a food processor and blitz until well combined
  2. Coat chicken breasts with marinade in a large bowl
  3. Cover and store in the fridge for 30 minutes
  4. Preheat oven to 180 degrees Celsius (electric)
  5. Line a baking tray with baking paper
  6. Once chicken is marinated, place on tray
  7. Bake for 20 minutes
  8. Once cooked, remove from heat
  9. Season and coat with lime juice, zest and pan juices
  10. Serve with your favourite veggies, salad and/or brown rice
Notes
There’s nothing but flavour with this delicious chicken recipe. Serve alongside your favourite veggies and brown rice.

Tamari is a gluten-free, less refined version of soy sauce and is readily available in stores.
