'Jaffa' Balls

  • 1 cup Medjool dates (roughly 8)
  • 1 orange, zest and flesh
  • 1 cup raw cashews
  • ¾ cup dessicated coconut
  • ⅓ cup raw cacao (+¼ cup for rolling)
  • 1 tablespoon coconut oil, melted
  • ½ teaspoon salt
  1. Pit dates, set aside
  2. Finely grate zest from the orange
  3. Remove skin and seeds from flesh
  4. Process cashews and coconut in a food processor until fine
  5. Add remaining ingredients to processor and process until well combined mixture
  6. Freeze mixture for 10-15 minutes
  7. Remove from freezer and roll into small balls
  8. Roll in cacao
  9. Serve immediately or enjoy straight from the fridge for up to one week
These raw treats are the perfect snack to make and have on hand as they can be stored in the freezer for up to three months.
