Paprika, Lime Chicken & Creamy Slaw 'Tacos'

Ingredients
Chicken
- 2 chicken breasts
- 1 teaspoon cumin
- 1 teaspoon sweet paprika
- 2 garlic cloves
- 2 teaspoons fresh lime juice
- Salt and pepper
- Olive oil for cooking
Creamy Coriander Lime Dressing
- 1 cup coriander leaves
- 1 teaspoon grated lime zest (1 large lime)
- ½ cup unsweetened Greek yoghurt
- 2 tablespoons olive oil
- 1 tablespoon fresh lime juice
- 2 small garlic cloves
- Salt
Slaw
- 1 cup red cabbage
- 1 cup carrot
- 2 large red radishes
- 1-2 teaspoons long red chilli, deseeded
- ½ heaped cup fresh coriander leaves
- ½ heaped cup fresh mint leaves
- Salt and pepper
To serve
- 4-8 pita pockets/Lebanese bread
- ¼ cup fresh coriander leaves
- 1 avocado
Instructions
- Bring chicken to room temperature, coat well with other ingredients and set aside
- Finely chop coriander leaves for dressing
- Combine with other dressing ingredients in a large bowl, crushing garlic into the mix and stirring well
- Set aside
- Finely shred cabbage and carrot for slaw
- Finely slice radish and chilli
- Season and combine all slaw ingredients
- Coat well with creamy dressing and set aside
- Heat a griddle or fry pan on medium-high heat
- Coat well with oil
- Once hot, add chicken and cook completely through each side
- While chicken is cooking, put the pita pockets either on a grill or dry frypan briefly to warm through
- Once chicken is cooked, take off the heat and slice thinly
- Take pita pockets and divide slaw between them
- Top with sliced chicken, coriander leaves and sliced avocado to serve
