Raw Cacao Fudge Brownie

It feels like it's been forever since I've blogged.

The funny thing is that I've had more ideas and inspiration for you than ever. Without the time to put any of it down, in the only way that I ever want to represent anything to you - with love, quality and knowledge.

Now as I come to the end of this academic year and the halfway point of my Nutrition degree (so with slightly more time on my hands), I'm blown away at how much knowledge I've acquired. How much more I know about the incredibly complex and awesome biochemical systems within our body.

What's been particularly affirming to experience at university is that my practical and real-world approach to food and eating is as relevant and impactful to long-term health and wellness as ever.

Because as I attend seriously involved lectures on pathology, pharmacology, clinical skills and biochemistry; I know how this applies in the real world. What works for people. What they need, what else is to consider and how to do it.

For now, and as I prepare for end of year exams, I was jumping at the chance to blog this divine, chocolate-y, fudge-y recipe for you to enjoy. Make this fudge brownie from just a few ingredients and leave to set in the freezer. You may even have the ingredients at home already. You're going to love it!

The Nutrition Low-Down

Medjool dates

  • Large, juicy and packed with fibre to assist with digestive function - 6.7g/100g
  • The soluble and insoluble fibre can work to lower LDL (oxidised) cholesterol which are contributors to heart disease
  • Source of minerals - potassium, magnesium, calcium and zinc for bone health and electrolyte balance
  • Source of vitamins - B2, B6, Vit K & A for energy production, cell health and immunity
  • Energy from natural carbohydrates

Raw Cacao

  • Loaded with 4 times the antioxidants of cocoa powder - these antioxidants protect the body from free radicals
  • Contains magnesium which is key for 300+ enzymatic reactions in your body
  • Source of serotonin and dopamine for that 'happy hit'
  • Natural stimulant so don't consume too close to bedtime

Raw Cacao Fudge Brownie

Ingredients
  • 10 Medjool dates
  • ½ cup raw cacao powder
  • 1 tablespoon coconut oil
  • ½ cup raw almonds (+1/2 cup optionally to top)
  • ¼ cup water (+1/4 cup if needed)
Instructions
  1. Line glass container or baking tin
  2. Pit dates
  3. Blend all ingredients together in a food processor until velvety smooth
  4. If too thick, add 1 tablespoon of water at a time to continue combining
  5. Transfer mixture to lined vessel and freeze for at least 4 hours
  6. Slice to serve

 


I love making this simple recipe and having it in the freezer to enjoy on demand. It's a variation of one of my go-to entertaining desserts and is hands down a winning treat to make from just a handful of ingredients.
