Sweet potato fries are that perfect mix of sweet and salty.
When done right that is.
I find whenever I share a recipe on Instagram such as this one, it goes down a treat so clearly others agree!
And this recipe has three things going for it.

You could easily sub in regular potato instead of sweet potato too. I love both options personally though either way, leave the peel on the veg for more fibre and a faster result!
This is a recipe that pretty much always makes me, and anyone I serve it to happy.

Sweet Potato Fries with Creamy Avo Dipping Sauce

Ingredients
Fries
- 3 small or 2 medium sweet potatoes
- Drizzle of extra-virgin olive oil
- Salt and pepper, to taste
Dipping Sauce
- ½ medium avocado
- ½ cup Greek yoghurt
- Coriander leaves from 2 stalks
- ¼ tsp ground cumin
- Salt and pepper, to taste
Instructions
- Preheat oven to 175°C
- Wash potatoes well
- Slice lengthways into fries
- Transfer to a large baking tray
- Add salt, pepper and oil to fries
- Shake well to coat
- Bake for 45-55 mins or until crisp and golden
- Whilst baking, add all sauce ingredients to a small food processor
- Process until smooth, adding seasoning to taste as you go
- Serve sauce with fries once baked
Notes
if you don't like coriander, sub for parsley or leave out.
