Bacon & Sauerkraut Bruschetta

Ingredients
  • 1 rasher quality bacon
  • 1 teaspoon oil, to cook
  • 5 cherry tomatoes
  • 1 tablespoon red onion
  • 2 teaspoon fresh dill
  • ⅓ cup sauerkraut
  • ½ avocado
  • ¼ cup fresh rocket leaves
  • Salt and pepper, to taste
  • 1 slice bread of your choosing
Instructions
  1. To cook bacon, heat oil in a frypan on med-high heat
  2. Cook each side until starting to become golden on the edges
  3. Whilst cooking bacon, wash, dry and quarter tomatoes
  4. Finely dice onion and chop dill
  5. Combine all remaining ingredients except bread together in a small bowl, season to taste
  6. Once cooked, chop bacon into smaller pieces and add to sauerkraut mixture
  7. Toast bread and when ready, top with combined mixture to serve
Notes
SAUERKRAUT - look for a quality and living product that is a true prebiotic.
The ingredients should include cabbage, salt and potentially other real food as flavouring e.g. herbs, spices.

BREAD - choose what you love though to keep the recipe gluten-free, opt for a quality nut and seed loaf variety which is perfect for toasting!
