Chicken Caesar Salad

  • 1 slice bread cut into small squares
  • 150g chicken tenderloins or breast cut into fillets
  • ½ tsp dried thyme
  • ½ tbsp extra virgin olive oil, to cook
  • 1 full handfuls lettuce (iceberg or cos), shredded
  • Few thin slices red onion
  • 1 medium radish, sliced into matchsticks
  • 1 tbsp pecorino or parmesan cheese, grated
  • ¼ medium avocado, diced
  • 4 cherry tomatoes, quartered
  • ½ tbsp mayonnaise
  • Extra-virgin olive oil, to dress
  • Salt and pepper
  1. Heat oil in a frypan over medium-high heat
  2. Add bread squares and cook, moving pan, until crispy and browned
  3. Once cooked, set aside
  4. Add thyme and olive oil to chicken in a mixing bowl
  5. Coat well
  6. Cook on a heated frypan over medium-high heat
  7. Turn chicken once over half the meat is white
  8. Remove from heat once cooked through and set aside
  9. Add salad ingredients to a bowl including croutons
  10. Add mayonnaise, a drizzle of olive oil and seasoning
  11. Mix well to combine
  12. Serve with chicken
You can easily use baby spinach leaves if you prefer or a combo.
No thyme? Use oregano or rosemary instead. Fresh or dried is fine. Just chop it very fine if using fresh.
Use any bread you like though stale works well too.
No time? Make the salad base and use takeaway BBQ chicken.
