Raw Muesli Bar

Ingredients
  • ¼ cup sunflower kernels
  • ¼ cup pepitas
  • ¼ cup dried mulberries
  • ¼ cup goji berries
  • ½ cup combined almonds and walnuts
  • 15 Medjool dates, pitted
  • 1 chia egg (1 tbsp chia seeds mixed with 3 tbsp water)
  • 1 tbsp macadamia oil (or olive oil)
  • 1 tbsp coconut flakes or dessicated (without preservatives)
  • 1 tbsp bee pollen (optional)
  • ½ cup raw oats (optional)
Instructions
  1. Pop all ingredients in a food processor
  2. Whizz away until combined though still chunky
  3. Pour/scrape mixture into loaf tin
  4. Set in freezer overnight
  5. Remove from the tin and slice into desired portions
  6. Store in an airtight container in the fridge for up to 2 weeks
