Watermelon & Mint Refresher

- ¼ small watermelon
- 20 small mint leaves
- Cut melon flesh away from the skin and place into a blender
- Roughly tear herbs and add to the blender
- Blend until smooth
- Pour into ice block moulds
- Set in the freezer for at least 4 hours
Remove by running moulds under hot water if necessary.
