Ingredients
  • ½ cup brown rice or quinoa, cooked
  • ½ cup Morrocan chickpeas
  • ½ cup baked cinnamon pumpkin
  • ½ cup red cabbage, thinly sliced (using a mandolin works a treat!)
  • ½ cup alfalfa sprouts
  • ¼ cup Puy lentils, cooked (French lentils are the bomb though green lentils will work just fine)
  • ¼ avocado, sliced lengthways
  • 1-2 free range organic eggs, hard boiled and sliced into wedges
  • 1 tablespoon hummus
  • 5 cherry tomatoes, quartered
  • 1 tablespoon red onion, diced finely (optional)
Instructions
  1. Arrange all elements on a plate and enjoy!
