Rainbow Coleslaw

- ½ carrot, peeled
- Small piece red cabbage
- ½ firmly packed cup alfalfa sprouts
- ¼ shallot stalk. finely sliced
- Rock salt and ground black pepper to season
- Fresh lime, to serve
- Fresh coriander, finely chopped to serve
- 1 tablespoon macadamia oil
- 1 tablespoon fresh coriander, finely chopped
- Prepare the carrot and cabbage with a mandolin or slice super thinly
- Combine in a bowl with the sprouts and shallots
- Whisk together the dressing ingredients
- Pour the dressing over the salad, season to taste, scatter the extra coriander and squeeze some lime over
This salad is fantastic served with a little goat's cheese or on the side of some grilled chicken.
