Ingredients
Omlette
  • 2 free range eggs
  • 2 spinach leaves
  • 1 teaspoon fresh parsley
  • 3 fresh basil leaves
  • Salt and pepper
Accompaniment
  • ½ avocado, sliced
  • ¼ cup alfalfa sprouts
  • ¼ cup cherry tomatoes, halved
  • Thin slice red onion, finely diced
Instructions
  1. Whisk together eggs, spinach, herbs, salt & pepper or use a blender to combine
  2. Butter a pan on high heat
  3. Once hot, add mixture
  4. Cook for a few minutes
  5. Flip in half & serve with accompaniment
