Green Omlette

- 2 free range eggs
- 2 spinach leaves
- 1 teaspoon fresh parsley
- 3 fresh basil leaves
- Salt and pepper
- ½ avocado, sliced
- ¼ cup alfalfa sprouts
- ¼ cup cherry tomatoes, halved
- Thin slice red onion, finely diced
- Whisk together eggs, spinach, herbs, salt & pepper or use a blender to combine
- Butter a pan on high heat
- Once hot, add mixture
- Cook for a few minutes
- Flip in half & serve with accompaniment
