Chicken Rice Paper Rolls with Chilli-Lime Dipping Sauce

Ingredients
  • 6 rice paper roll sheets
  • 1 medium chicken breast
  • 1 avocado
  • 1 carrot
  • 1 cucumber
  • ½ bunch coriander
  • ½ bunch mint
Dipping Sauce
  • 1 tablespoon lime juice
  • 1 tablespoon maple syrup
  • 1 tablespoon tamari
  • ¼ teaspoon chilli flakes
Instructions
  1. Season chicken with salt, pepper & grill until cooked through
  2. Cut into long strips & set aside
  3. Wash & cut vegetables into long strips
  4. Wash & pick herbs off the stalk
  5. Combine all ingredients to make dipping sauce
  6. Submerge rice paper roll sheet one at a time into a frypan full of hot water for 5 seconds
  7. Transfer to a plate & allow to soften for up to 1 minute
  8. Layer ingredients onto rice paper roll sheet starting closest to you and being sure not to pack in too much
  9. Roll halfway, tuck in the sides & continue to roll
  10. Repeat the process with other sheets & serve with dipping sauce
  11. Store remaining fresh rolls in an airtight container in the fridge for up to 1 day
