Lemon Cheesecake Bites

Ingredients
  • 1 cup soaked cashews
  • 1 cup desiccated coconut (+ ¼ cup for rolling)
  • Zest from ½ small lemon
  • Juice from 1 small lemon
  • 2 heaped tablespoons rice malt syrup
  • ¼ teaspoon vanilla powder (or ½ teaspoon vanilla extract)
Instructions
  1. Soak cashews in water for 20 minutes
  2. Combine all ingredients in a food processor
  3. Blend until well combined, until dough forms a ball
  4. Roll and coat well in coconut
  5. Store in an airtight container in the fridge for one week
Notes
Can be made in bulk and frozen.
