Beef Stir Fry

Ingredients
  • 3 tablespoons olive oil
  • 300g quality beef strips
  • 2 cloves garlic, finely diced
  • 1 thumb fresh ginger, peeled and finely sliced
  • 1 long fresh chilli, deseeded and finely sliced
  • Handful bean sprouts
  • 1 tablespoon tamari
  • ½ tablespoon sesame oil
  • Juice of ½ lime
  • 1 red capsicum, finely sliced
  • 1 handful snow peas
  • 6 shallots, sliced
  • Fresh coriander leaves, to serve
Instructions
  1. Add 2 tablespoons oil to hot wok or large frying pan
  2. Stir fry beef, garlic, ginger and chilli until just cooked
  3. Add bean sprouts, tamari, sesame oil and lime juice for 30 seconds
  4. Remove from heat and pour contents into a large bowl
  5. Return wok to heat and add remaining oil
  6. Stir fry all vegetables for 1-2 minutes
  7. Return beef and juices to wok
  8. Heat through quickly and divide between plates to serve
  9. Top with fresh coriander leaves
Notes
Optionally serve with with brown rice or noodles
