Italian Summer Salad

Ingredients
  • 1 punnet cherry toms
  • 1 medium red capsicum
  • 1 medium cucumber
  • 2 generous tablespoons fresh basil
  • 2 tablespoons parmesan cheese
  • 1 tablespoon olive oil
  • ½ tablespoon balsamic vinegar
  • Salt and pepper, to taste
  • Fresh chilli (optional)
Instructions
  1. Wash all vegetables
  2. Halve tomatoes
  3. Chop capsicum and cucumber
  4. Finely chop basil
  5. Peel or grate cheese
  6. Combine all ingredients in a mixing bowl
  7. Coat well with oil and balsamic
  8. Season to taste
  9. Add optional fresh, sliced chilli
  10. Serve and enjoy
