Stewed Pears with Oat Crumble

Ingredients
Stewed Pears
  • 5 pears
  • 1 teaspoon vanilla powder/2 teaspoons vanilla extract
  • 2 tablespoons rice malt syrup
Oat Crumble
  • 3 tablespoons coconut oil
  • 1 ½ cup oats
  • ½ cup pepitas
  • ½ cup sunflower seeds
  • ¾ cup pecans, roughly chopped
  • ¾ cup coconut flakes
  • Unsweetened Greek or coconut yoghurt, to serve (optional)
Instructions
  1. Wash, core and chop pears into smaller pieces
  2. Place in a medium saucepan, just cover with water
  3. Add vanilla and sweetener, stir through well
  4. Bring to the boil
  5. Cover and turn to medium heat
  6. Cook for 35-40 minutes or until pears are well softened though still holding their shape
  7. Either drain pears for use or retain in liquid for further flavour
  8. With 10 minutes to go on the pears, prepare the crumble topping
  9. Heat small frypan on med-high heat
  10. Once hot, add oil, coating pan well and remaining ingredients
  11. Toast for a few minutes, stirring until golden and aromatic
  12. Serve warm with stewed pears and optional yoghurt
Notes
A winter warming dessert without the guilt!
This is the perfect kind of dessert or snack to serve any day of the week or when people are coming over – just put it on and leave it!

If you’ve only got apples, or a combo of the two fruits, either use both or substitute for a different, still delicious result.
Either way, keep the pears in the liquid to retain maximum flavour and you could even use the liquid with the pears as a sauce. For instance when serving over porridge for breakfast.

GLUTEN-FREE? Either remove the oats from the crumble all together or substitute with rolled/puffed quinoa flakes.

TOP TIP - Make a larger batch of the crumble and store in an airtight container to have on hand through the week and enjoy as a 'cereal' with yoghurt.
