Quick Omlette

Ingredients
  • ¼ cup mushrooms
  • ¼ cup red capsicum
  • 1 teaspoon red onion
  • 2 tablespoons parsley leaves
  • 2 tablespoons cheddar cheese
  • ¼ cup baby spinach leaves
  • 2-3 eggs
  • Salt and pepper, to taste
  • 1 teaspoon olive oil
Instructions
  1. Wash and finely dice mushrooms and capsicum
  2. Finely dice onion
  3. Finely chop parsley and grate cheese
  4. Crack eggs into a mixing bowl, season and whisk well
  5. Add parsley and cheese to the eggs, set aside
  6. Heat frypan on med-high heat
  7. Add oil and onion, bringing both to the heat and cooking for a few minutes until fragrant and softened
  8. At this stage add mushrooms, capsicum and baby spinach
  9. Cook until leaves are wilted and vegetables are cooking through
  10. Add egg mixture
  11. Cook for a few minutes and flip once a spatula can cleanly pass underneath
  12. Cook until eggs are set and serve immediately
