Crack eggs into a mixing bowl, season and whisk well
Add parsley and cheese to the eggs, set aside
Heat frypan on med-high heat
Add oil and onion, bringing both to the heat and cooking for a few minutes until fragrant and softened
At this stage add mushrooms, capsicum and baby spinach
Cook until leaves are wilted and vegetables are cooking through
Add egg mixture
Cook for a few minutes and flip once a spatula can cleanly pass underneath
Cook until eggs are set and serve immediately
