Perfect Baked 'Fries'

Ingredients
  • 3 large potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon fresh rosemary leaves
  • 1⁄2 teaspoon fresh or dried thyme leaves
Instructions
  1. Preheat oven to 175 degrees Celsius (electric)
  2. Wash potatoes well
  3. Halve potatoes lengthways and again
  4. Cut segments into chips
  5. Season well with salt, pepper, herbs and oil
  6. Bake for 25 minutes, shake tray and bake for a further 15 minutes
  7. Remove from the oven when golden and crispy
  8. Allow to cool and serve
Notes
A weekend treat, the perfect dinner side or snack for when friends are over – who knew 'fries' could be so simple and so nourishing!

Delicious alone or served with guacamole.

Leave the skin on the potatoes and benefit from their wonderful, fibrous content.
