Caprese salad

  • 10 small-medium fresh basil leaves
  • ½ punnet cherry or grape tomatoes
  • 1 teaspoon red onion
  • ⅓ cup buffalo mozzarella or ½ ball
  • ½ teaspoon capers
  • 1 teaspoon olive oil
  • ½ teaspoon balsamic vinegar
  • Salt and pepper, to taste
  1. Wash, dry and tear basil leaves to release their flavour
  2. Wash and quarter tomatoes
  3. Finely dice onion
  4. Tear mozzarella into large chunks
  5. Arrange all ingredients on a plate
  6. Drizzle oil and balsamic over and season to serve
This is a lovely entrée or side dish and a true treat to the senses.
You could even serve to guests (or yourself!) with fresh sourdough bread.
