Roast Carrots with Tahini Dressing

Ingredients
- 2 bunches Dutch carrots
- Salt
- 1 tablespoon olive oil
Dressing
- 2 ½ tablespoons unhulled tahini
- ½ garlic clove, crushed
- ¾ tablespoon lemon juice
- 1 tablespoon water
- ½ teaspoon rice malt syrup (maple syrup or honey for non-vegans is OK)
- Salt to taste
Instructions
- Preheat oven to 175 degrees Celsius (electric)
- Wash carrots well and trim stalks
- Place in a baking tray
- Add salt and oil, massaging well
- Once oven is to temperature, roast for 60-65 minutes until golden and well roasted
- As carrots roast, whisk together dressing ingredients, set aside
- Serve carrots warm with tahini dressing drizzled over
