Roast Carrots with Tahini Dressing

  • 2 bunches Dutch carrots
  • Salt
  • 1 tablespoon olive oil
  • 2 ½ tablespoons unhulled tahini
  • ½ garlic clove, crushed
  • ¾ tablespoon lemon juice
  • 1 tablespoon water
  • ½ teaspoon rice malt syrup (maple syrup or honey for non-vegans is OK)
  • Salt to taste
  1. Preheat oven to 175 degrees Celsius (electric)
  2. Wash carrots well and trim stalks
  3. Place in a baking tray
  4. Add salt and oil, massaging well
  5. Once oven is to temperature, roast for 60-65 minutes until golden and well roasted
  6. As carrots roast, whisk together dressing ingredients, set aside
  7. Serve carrots warm with tahini dressing drizzled over
A new twist on an old favourite and the perfect accompaniment to a classic lamb rack, served alongside some grilled protein or added to a salad.
