Ingredients
- 1 lamb rack (8 cutlets)
- 4 garlic cloves
- 1 stalk fresh rosemary leaves
- 2 tablespoons olive oil
- Salt and pepper
Instructions
- Pre-heat oven to 175 degrees Celsius (electric)
- Bring lamb rack to room temperature
- Make small and careful incisions between each cutlet
- Flatten garlic cloves with the back of your knife, peel skin away and chop roughly
- Coat lamb with oil on a large meat board
- Season well, add herbs and garlic, massaging well and paying close attention to incision points for maximum flavour
- Place on a roasting rack within a baking tray
- Bake for 30 minutes, or as preferred
- Remove from oven, allow to rest for 5 minutes
- Slice cutlets and serve with your chosen sides
