Ingredients
  • 1 lamb rack (8 cutlets)
  • 4 garlic cloves
  • 1 stalk fresh rosemary leaves
  • 2 tablespoons olive oil
  • Salt and pepper
Instructions
  1. Pre-heat oven to 175 degrees Celsius (electric)
  2. Bring lamb rack to room temperature
  3. Make small and careful incisions between each cutlet
  4. Flatten garlic cloves with the back of your knife, peel skin away and chop roughly
  5. Coat lamb with oil on a large meat board
  6. Season well, add herbs and garlic, massaging well and paying close attention to incision points for maximum flavour
  7. Place on a roasting rack within a baking tray
  8. Bake for 30 minutes, or as preferred
  9. Remove from oven, allow to rest for 5 minutes
  10. Slice cutlets and serve with your chosen sides
Notes
